Sweet Potato Burritos with Avocado Salsa Verde… the avocado sauce in itself is amazing. I could definitely just much on that with some chips, but adding in the sweet potato business - awesome. Highly recommended!

Such a scrumptious meal this evening in snowy Milwaukee! I made spicy, cheesy quinoa with a side of collard greens. Perfect meal!


Here’s the recipe I started with for the cheesy quinoa. I added quite a few additional spices that weren’t listed, and i didn’t use the garlic in my quinoa. Next time, I think I’ll use a little less of the quinoa, and maybe mix it up with the cheese selection. I also topped my serving with sriracha, because obviously.
For the greens I just diced and then caramelized an online, added some sliced garlic and cooked it for a couple of minutes, then added the greens and a bit of vegetable broth to braise them over low heat for 15-20 minutes. Super delicious!
